The drastic change in flavor profile comes from how temperature affects the barrels. Typically, there is no temperature regulation in aging warehouses. During the winter months the barrels contract and then expand once the summer heat approaches. # The Roadmap
## The Distillery
Our first objective is the design, construction, and inauguration of The Graine Ledger Distillery. The American Genesis Collection will require a facility that can output 556,500 gallons over the course of two years. We are working with consulting partners to ensure that our distillery floor and process meet the highest standards using the latest in distilling technology.
1. **Design & Construction:** 12-18 months
2. **American Genesis Collection:** All primary barrels will be filled within the first year if we are able to achieve an annual output of 278,250 gallons. NFT will be updated once your barrel is filled and begins its journey. *This is also the time frame in which we are filling employee barrels* (12 months )
3. **Insurance & Founders Barrels:** Filled in the second year, with the founders prioritized last. *The founder's own insurance barrels will be filled lastly*. I*f obligated to do so, to maintain operations of the distillery, we will defer the filling of our barrels as necessary.* (12 months)
4. **Commercial Vodka production**: In order to generate ongoing revenue for the distillery to maintain distillery operations, we will utilize the excess distillate to produce our own brand of vodka for the first three years of operation, the third year being focused solely on production if applicable.
5. **Commercial Rye Whiskey Product:** The distillery will continue to operate in perpetuity after the barrels for the American Genesis collection have been filled and after the first three years of distillery operations. The second product under our brand will be an experimental rye whiskey that we hope to work some of our biochemical wizardry on to discover new experiences for whiskey enthusiasts. More information regarding this project will be revealed as we get near the completion of the American Genesis Collection.
6. **Ongoing Community Revenue Share:** American Genesis NFT holders will be able to benefit from the continued operation of the distillery through the allocation of a portion of our profits to a special community-moderated fund, **The Graine Ledger Treasury**. Some ideas for what the community funds may be used include community investments, loans, events, etc.
### Estimated Duration: 2 - 4 Years
## The Farm
From the very beginning, we will be looking to acquire a large parcel of land or a parcel that has adjacent parcels that may remain available to us in the future. Once the distillery is commercially operational, we will begin developing the remaining land for cultivation of our own grain and eventually vegetables, fruits, and herbs of all varieties. The farm will not be tuned for yield but for quality, using eco-friendly processes. The yield from this farm will be used to develop our top shelf whiskey collections.

4. **Vegetable Patch Established**
5. **Dairy Operations Established:** A byproduct of the whiskey making process are the malt culms, dried shoots and rootlets of sprouted grain. These make for ideal feed for cattle and can thus allow us to operate our own small dairy operation onsite.
### Estimated Duration: 1 - 2 Years
## The American Connoisseur Collection
Our greatest ambition with this project is to allow whiskey lovers to craft their own whiskey through our distillery while having as granular control over the process as possible. The degree of customization available to American Connoisseur Collection investors will be as comprehensive as possible. All grain will be sourced from our farm. This will be a collection that we will offer in perpetuity but in small batches. Lastly, all American Genesis Collection owners will receive one American Connoisseur Collection *barrel for each American Genesis barrel they own*.
-depending on what is available per growing season, each owner will receive 2 barrels (one normal and one insurance) based on a lottery style selection process. for each season, the previous seasons winners will not be eligible to ensure each owner receives at least one Connoisseur Collection barrel.
### Estimated Launch: Year 5
## The Lodge & Restaurant
Although the timeline from this point onwards is a bit more speculative as of now, the scaling of our operation should easily allow for the establishment of an onsite lodge and restaurant. The Graine Ledger Lodge & Restaurant will be open to public but also provide special access to our American Genesis Members. Guest at the lodge will be invited to tour our distillery and farm. Our restaurant would be available by reservation only and would only serve dishes that use produce grown on our farm. The dimensions and amenities of the Lodge & Restaurant are yet undecided.
### Estimated Launch: Year 6
## The Resort
We would like to consolidate all our various operations into a resort experience including our very own 18-hole golf course, recreational facilities, and equestrian facility. Our highest priority will always be our American Genesis Members who would receive unparalleled access and treatment. Our vision for a community-driven operation and the success of just one commercial product can make this all possible and potentially even more.

## The Graine Ledger Ireland, Japan, & Beyond
Once we are able to prove the viability of our vision, we will work to emulate it in other whiskey-producing regions around the world. Each such project will begin producing its own Connoisseur collection. American Genesis Collection owners will be given a free Connoisseur Collection barrel from each initiative that we undertake. We hope to continue to grow organically and prosperously along with a vibrant community with whom we may share our prosperity.
# Cask Styles
Wood types that will be utilized for casks
**Our ambition is to bring every aspect of the whiskey making process to your fingertips**, including choosing the very wood to age your whiskey in. With our [**American Genesis Collection**](/collections/the-american-genesis-collection), we will utilize solely **American white oak**. However, with each successive release we hope to provide additional selections of wood types to give our consumers the reigns in designing their product. Starting with the introduction of **European**, **Mongolian**, and **Sessile** oak, eventually delving into the **experimental** and the **unconventional**. Keeping with our community driven model, members participating in collections offered by The Graine Ledger will have say as to what wood types they wish to see in each new release.
# Mash Bills
The Graine Ledger is committed to serving every palette. As such we will offer an array of mash bills to satisfy every whiskey enthusiast's taste. Eventually including corn (MFC is a personal favorite of one of our founders), rye, sour mash, single malt and of course a range of bourbon options; high rye, traditional, and wheated. Everything will be fully disclosed, from the percentages of each grain in the mash, to the source of the distillate if necessary (The Graine Ledger is to be a fully functioning distillery and NOT solely a whiskey producer, however, we are aware of possible limitations and will disclose as permitted). With the American Genesis Collection, we will offer a variety of mash bills to be selected from by community members, the selected mash will produce the distillate for the AGC. In addition, The Graine Ledger will eventually be producing its own signature line of whiskey to be purchased on the whole-sale market. These bottles will not be decided upon by the community but instead by the Founders. However, community members are entitled to signature products as part of cask ownership (limitations vary upon release).
# Barrel Ownership
With most NFTs available on the market, the item you own is a digital image with no tangible value. In contrast, as a member of The Graine Ledger community your NFT is a deed to a unique cask of whiskey that you have creative control over. So long as you own the corresponding NFT, that barrel is yours to do with as you see fit. The choice is yours; do you want to take an experimental approach? Try and replicate a personal favorite? Have a unicorn or tater bottle in mind that you have never seen or tried? The possibilities are endless when you are given the reigns, and that is exactly what we hope to achieve.
### Owning American Genesis Barrels
The American Genesis barrels will be limited to one mashbill voted on by the community but will allow owners to determine the char level and the finish of the product.
### Owning Connoisseur Collection Barrels
The Connoisseur Collection, available starting in our 5th year, will allow for complete customization of your whiskey. We will offer an online app that will give you access to various options for each major point in the whiskey production process. Once your selections are set, you will be able to mint the barrel as an NFT which will allow you to follow the process similarly to the American Genesis Collection but with much more detail and personalization.
## Barrel Insurance
We are human and as such we are prone to mistakes. We acknowledge the possibility of your barrel being damaged, lost, or wrongfully tapped. To guarantee the safety of your whiskey, each barrel purchased will have a coinciding duplicate **insurance barrel**. In the event that the original barrel needs to be replaced, this insurance barrel will be used in its place. If, however, your barrel remains unharmed at the time of bottling, the insurance barrel will instead be sold as a unique release (sold as individual bottles, not as a whole barrel) and a portion of the revenue will be donated to the Community DAO. Standards of what is insurable will be set relative to estimated loss, otherwise known as the Angel's share, per aging year. More details will be provided in a comprehensive insurance policy accessible to each owner.
# Tapping & Bottling
## Tapping your barrel
When you feel that the moment is right and you're ready to enjoy your barrel, your barrel will be tapped. Does this happen in 6 days, weeks, months, decades...? The choice is ultimately yours. This action will also change the NFT itself, although your involvement in The Graine Ledger ecosystem will not. Although you no longer have a cask associated with the NFT, it is your token that allows your place in the DOA and all related community events. Selling of the NFT after tapping is of course permitted, but this will result in the loss of your place in the community (exception for American Genesis owners).
## Bottling
After your barrel is tapped, every bottle will be labeled with every detail that pertained to the cask the whiskey was pulled from. Barrel name, location, mash bill, bottle number, finish, owner, barrel date, pull date, and the unique logo design made by the creator will all be present. As a true single barrel product, this is whiskey in its purest form. Cask strength. Non-chill filtered. This is whiskey created by those who want to cherish it.
# The Finish
A finished whiskey is one that has been matured in a primary barrel and then "aged again". This could be it being transferred into a new vessel (think toasted barrel finishes i.e. Woodford double oaked), a previously used vessel that harbored a different product (think wine barrel finishes i.e. Angel's Envy), or having staves inserted into the same barrel to add extra nuance (think Maker's Mark 46). In essence, we could simplify this to say that anything we do to the whiskey after it has been aged primarily to add extra nuances is a "finish".
# The American Genesis Collection
Our foundation lies in **two** core values, **transparency** and **community input**. What we have is an idea; an idea that we believe is shared by everyone in the whiskey community, that the ability to create and taste your own whiskey enables an epitomic experience of whiskey not available through mere consumption. We want to give our members **complete creative freedom**, more so than any other distillery before us and our first collection gets us moving in that direction. \

It is possible to distill and craft in small batches at home but the complexity of whiskey that arises from its journey through a quality-controlled, large-scale distillery is unmatchable. The metal, wood, and even air that the whiskey interacts with at the distillery gives it a character seldom attainable through a home still.

Beginning our journey is the **American Genesis Collection**. In our initial collection, we hope to release 10,500 barrels distributed as follows and prioritized accordingly:
* **4,000** barrels for public mint.
* **250 barrels** reserved for current and future employees.
* **1,000 barrels** reserved for the Founders of The Graine Ledger Distillery.
The remaining barrels (5,250) will be [**insurance barrels**](/guides/barrel-ownership#barrel-insurance) for each member of our owner community (each barrel will come with its own duplicate) as an insurance policy. ## Ownership Benefits
Keeping with our core values, the success of this project is entirely dependent on the support of our founding members. We have no stills, land, rick houses...all we have is a great team, discipline, dedication, and the desire to produce your finest product. The initial minting of The American Genesis Collection is aptly named because it *is* the genesis of The Graine Ledger community. As such, we will be giving back to those members who shared in our vision and granted us the means to make it true. Each founding member will be receive the following benefits:
1. **One American Connoisseur Barrel per American Genesis Barrel Owned**
The connoisseur collection will have very limited availability on an annual basis. We will determine how many barrel we could possibly mint every year based on the yield of our farm. Whatever quantity we choose, 25% will be reserved for American Genesis owners annually until all owners have one per barrel they own. This 25% will be randomly selected based on a lottery system using AGC barrel numbers. Those numbers selected will be automatically removed from the next drawing.
2. **One Graine Ledger Genesis Barrel per AGC Owner (\*NOT BARRELS\*) when New Distilleries are Opened in International Whiskey Producing Regions**\
The Graine Ledger will begin replicating its success in other whiskey-producing regions of the world including, but not limited to, Ireland, Japan, and Canada. When these distilleries are founded, they will begin producing Genesis Collections of their own. New minters will have priority with public mint barrels being filled first, just like with AGC. AGC Owners will be gifted barrels based on a lottery process similar the one mentioned above. The lottery system will rely on wallet addresses instead of barrel numbers.
3. **One Free Night at the Graine Ledger Lodge/Resort per Year for Each Owner**\
This will be a standard king or double queen room with some extra perks for AGC owners. Reservations will need to be made in advance and availability will not be guaranteed for the exact date you choose but we will try our best to accommodate you. While staying with us, you will have free breakfast and dinner at our Lodge as well access to other paid amenities for free.
4. **VIP Access to the Distillery and Distillery Tours**\
AGC owners will have a special lounge, **The American Genesis Lounge**, within the distillery where they can have tastings or hold private events. They are welcome to use it at their leisure although events would need to be books in advance. The lounge will have spectacular views of our distillery floor and amenities including catering, open bar, premium sports broadcasts, and more. An owner's level of access will depend on their Ownership Ranking.
5. **Early Product Samples**\
We are a grain-focused distillery so we will also be distilling other spirits besides whiskey and different varieties of whiskey as well. The Graine Ledger will provide a way to register to receive anywhere from a case to a single bottle, according to their Ownership Ranking, to be shipped to them if eligible based on state, federal, and international regulations.
**Additionally, 10% of secondary trades of all NFT releases will be retained by The Graine Ledger as royalty, 3% of which will be directly given to The Graine Ledger Treasury. Royalties will not apply to bottle sales after the barrel is tapped, only to the sale of the NFT.** As an AGC owner you will have access to the entire Graine Ledger ecosystem (discussed in our roadmap). This access will be granted by the NFT of your barrel itself. **After the barrel has been tapped, your NFT will convert to a lifetime membership pass** which will give you access to all the benefits discussed above. We will also have an app for prospective owners to know which benefits have already been applied to each individual NFT.
Each barrel will be unique, it will be yours. As such, each bottle will be labeled appropriately, including rick house, floor, tap and fill date, as well as bottle number. Each label will bear the name/social media id/brand of the barrel's owner at the time of bottling. **As is the case with any single-barrel whiskey, we cannot guarantee how many bottles will be pulled from each barrel.** At this time, we will not be allowing for the mixing of barrels that are shared between members, in the future, however, this is another level of production that we wish to put in the hands of our community members.

We have no stills, land, rick houses...all we have is a great team, discipline, dedication, and the desire to produce your finest product. The initial minting of The American Genesis Collection is aptly named because it *is* the genesis of The Graine Ledger community. As such, we will be giving back to those members who shared in our vision and granted us the means to make it true. Each founding member will receive the following benefits:
1. **One American Connoisseur Barrel per American Genesis Barrel Owned**
The connoisseur collection will have very limited availability on an annual basis. We will determine how many barrel we could possibly mint every year based on the yield of our farm. Whatever quantity we choose, 25% will be reserved for American Genesis owners annually until all owners have one per barrel they own. This 25% will be randomly selected based on a lottery system using AGC barrel numbers. Those numbers selected will be automatically removed from the next drawing.
2. **One Graine Ledger Genesis Barrel per AGC Owner (\*NOT BARRELS\*) when New Distilleries are Opened in International Whiskey Producing Regions**\
The Graine Ledger will begin replicating its success in other whiskey-producing regions of the world including, but not limited to, Ireland, Japan, and Canada. When these distilleries are founded, they will begin producing Genesis Collections of their own. New minters will have priority with public mint barrels being filled first, just like with AGC. AGC Owners will be gifted barrels based on a lottery process similar the one mentioned above. The lottery system will rely on wallet addresses instead of barrel numbers.
3. **One Free Night at the Graine Ledger Lodge/Resort per Year for Each Owner**\
This will be a standard king or double queen room with some extra perks for AGC owners. Reservations will need to be made in advance and availability will not be guaranteed for the exact date you choose but we will try our best to accommodate you. While staying with us, you will have free breakfast and dinner at our Lodge as well access to other paid amenities for free.
4. **VIP Access to the Distillery and Distillery Tours**\
AGC owners will have a special lounge, **The American Genesis Lounge**, within the distillery where they can have tastings or hold private events. They are welcome to use it at their leisure although events would need to be books in advance. The lounge will have spectacular views of our distillery floor and amenities including catering, open bar, premium sports broadcasts, and more. An owner's level of access will depend on their Ownership Ranking.
5. **Early Product Samples**\
We are a grain-focused distillery so we will also be distilling other spirits besides whiskey and different varieties of whiskey as well. The Graine Ledger will provide a way to register to receive anywhere from a case to a single bottle, according to their Ownership Ranking, to be shipped to them if eligible based on state, federal, and international regulations.
**Additionally, 10% of secondary trades of all NFT releases will be retained by The Graine Ledger as royalty, 3% of which will be directly given to The Graine Ledger Treasury. Royalties will not apply to bottle sales after the barrel is tapped, only to the sale of the NFT.** As an AGC owner you will have access to the entire Graine Ledger ecosystem (discussed in our roadmap). This access will be granted by the NFT of your barrel itself. **After the barrel has been tapped, your NFT will convert to a lifetime membership pass** which will give you access to all the benefits discussed above. We will also have an app for prospective owners to know which benefits have already been applied to each individual NFT.
Each barrel will be unique, it will be yours. As such, each bottle will be labeled appropriately, including rick house, floor, tap and fill date, as well as bottle number. Each label will bear the name/social media id/brand of the barrel's owner at the time of bottling. **As is the case with any single-barrel whiskey, we cannot guarantee how many bottles will be pulled from each barrel.** At this time, we will not be allowing for the mixing of barrels that are shared between members, in the future, however, this is another level of production that we wish to put in the hands of our community members.

In staying true to the original intent of NFTs, we hope to deliver this visual representation artistically. Our artist has worked diligently to produce truly remarkable depictions of the whiskey-making process and you will get to experience them all during your time as a barrel owner.

The American Genesis Collection NFT will take you on a journey with your whiskey, showing you every step in its lifecycle, and finally delivering to you a fine spirit that can consolidate the entire experience.
# For Biochemists & Scientists
What results from the customization process, limited in the AGC and complete in the ACC, is a diverse sample set of whiskies. With the AGC, for example, we are able to obtain 4000 elements in our dataset. with 3 parameters for each. By the end of the AGC, we should have an understanding of how char level, aging time, and finish impact the chemical composition, and thereby, the character of the whiskey. After the Connoisseur collection is available, we would be able to gather data related to the various changes in the character of many mash bill products based on various conditions. \
\
We also test the market with so many products that we can begin to gather data related to the preferences of our customers. If a particular barrel produces a highly desirable whiskey, we can look back at the composition of that whiskey, informed by mass spectrometry of a sample of the whiskey, and then identify the compounds related to the most prominent and acclaimed notes.
\
Over time, we should be able to develop a workflow that can allow for whiskeys to be customized purely based on note selection with details related to barrel type, mash bill, aging, and finish all calculated for you at mint, if you so choose. For any options you may modify yourself, we would also be able to predict the flavor profile for you. \
\
Moving forward, we would identify the biosynthetic pathways that build such compounds through a high-throughput bioinformatics workflow, catalog the genetic information required to transplant such pathways into yeast using the CRISPR/Cas9 genome editing system, and potentially be able to craft a spirit that can give you the experience of any whiskey you may desire, no matter how old, or by which meticulous process manufactured. In the far future (or in the near), we may be able to provide anybody with any whiskey they choose, whenever they choose. We believe that the only way to ensure that we are producing the best whiskey is to make ourselves capable of producing any whiskey.
# The Founder
## Krishna Patel
I am a writer, entrepreneur, filmmaker, and researcher. I decided to gain knowledge through experience and that led me on a journey to discover the tranquility and power of media and culture at the global scale. Just 4 months out of film school, I took on a feature film, which gave me my first feature film director credit at the age of 19. My LA-Based company, 2Change Films produced over 150 music videos and 60 commercials plus many other types of content such as webseries, documentaries, as well as the Annual Vijay Amritraj Foundation Gala which was broadcasted to over 100 million viewers worldwide.
My analytical approach to the global media trade brought to light a segment of the industry that was untapped. I realized that the international television format industry was just emerging and there was a space for a venture that could take part in it from the South East Asian region. I worked with a fantastic team of people to develop multiple formats and make great industry relationships while we tried to find our place in the new industry.
Recently, I chose to return to academia and completed two degrees: BS in Biochemistry and BA in English, and hope to continue working on biochemical and neuroscience research. Our future is full of opportunities and I am excited by our ability to learn and adapt to it. Whether it be epigenetics or economics, I hope to unravel them at greater and greater resolutions and create new ventures and industries that can add value to the lives we live and the environment within which we flourish.

# The Artist
## Manoj Mhapankar
I have and always will consider myself an artist who simply enjoys the journey of acquiring new skills along the way. For me, learning is second nature. Out of all the things I have learned, from my childhood up till now; I found that art is the most suitable medium for me to express myself. \
\
School and later engineering college not only helped me understand the workings of this universe but also helped me gain my own perspective on how things looked and worked. This helped me a lot with my art. The journey which started with simply a piece of paper and a pencil, years ago, has now progressed to the digital canvas and the journey has been exhilarating. \
\
Working as a full-time artist and content creator, I have also had the opportunity to witness the journey of many entrepreneurs and brands, from a seed to a sapling, and then growing into grand arboresque structures. This experience, along with my own growth as an artist, is something I take pride in. However, I find myself humbled when I discover new skills and art forms to learn, sometimes with overwhelming frequency. Yet, I hope to continue to use these experiences, along with my expertise, to help others on the way to achieving their goals.

## Kerul Patel
By nature, I consider myself dedicatedly oriented towards the tortuous practice of logic. This often means that before doing anything, I start rigorously exploring possibilities and potential hurdles. I find myself often with thoughts running rampant in my mind: what variables can I correct for while I tweak this or that and what can I do to make more than just incremental improvements to the product, service, or experience. And that's what brought me into the IT field.
Turned out, I am somewhat of an IT Geek. I fell in love with the structured and coordinated development it allowed for. Seems like time flies because I have now been active in the IT industry for more than 20 years. I'm a Founder and CEO of Adaptable Services, a software solutions company which I founded back in 2017. My journey started back in 1998 as a hardware and network engineer. I worked in that industry for almost 2 years. But my interest in software development pulled me towards the software industry. I started from the ground up in 2000, working as a junior software developer in a company for nearly a year and a half, but then I never look back. In 2005, I'd started my own company Pro Designz (Programming and Designing). I enjoy learning and love to experiment with new technologies. I am very passionate about Data Management and strive continuously to better myself as a software developer. Along the way I've built applications that solve problems for small businesses, government organizations, and market research companies.
Currently, as the CEO of Adaptable Services, I am responsible for running all the facets of the business. Improving operations and driving company growth is the current motto. In the meantime, when I miss being a developer, I choose to develop SaaS Applications with the help of cloud technologies. My goal is to help companies use the cloud in the smartest, most effective ways. I know it's a bit cliche, but the future is in the cloud and I am on the path to make it more adaptable for businesses. I love to adapt new ideas and explore new opportunities; hence I could not refuse my co-founder, Krishna's offer to join The Utility Company team. I am a believer in Krishna's vision and idea behind The Utility Company, so I immediately began honing my web3 skills to take on the task of fulfilling the missions of "The Graine Ledger" and "The Loch Ness Botanical Society". In my off-time, I also love art, music, and long road trips through winding mountain roads.
